Foam
Carving is when an artist cuts or chips away from a hard material like wood, foam, or stone. Carving is a subtractive method - material is carefully removed.

Notice how the artists use a sketch & photos to get started. Draw out the main form on the foam, and cut with hot wire. Then notice how they use rasps, files, and sandpaper to sculpt, carve, and form foam.
Paper Mache
Notice how in both videos, they create an armature (skeleton) before adding the paper mache (skin).

You can use all kinds of materials for armatures: cardboard, wire, balled up newspaper shaped into a form... The paper mache will smooth everything out!
